Crawfish Fettuccine
Serves: 4
- 1/2 cup butter
- 1 pound crawfish tails
- 1 teaspoon soy sauce
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- Salt and pepper
- 6 ounces fettuccine noodles, cooked and drained
- 2 Tablespoons butter, melted
- 1/2 cup Parmesan cheese
Melt 1/2 cup butter in a saucepan. Stir in crawfish, soy sauce, onion, garlic, salt and pepper. Saute’ until onions and garlic are wilted. Toss fettuccine with 2 Tablespoons butter and Parmesan cheese until nicely coated. To serve, mound warm noodles on plate and spoon crawfish mixture over it.
